2 cups shredded potatoes, fresh or frozen
1 onion, finely chopped or shredded
2 eggs
1/2 cup flour
salt
pepper
applesauce and sour cream for garnish
Mix potatoes, onion, egg, flour, salt and pepper, spoon into hot olive oil in a shallow skillet. Fry until golden brown, turn and fry until that side is golden also. (about 5 minutes on each side.) Serve with sour cream and applesauce.
